Now that the weather has cooled down many of you may have pulled out your crock pots, and if you don’t have you you may want to stop everything you’re doing and run to the nearest kitchen supply store and get yourself one. Crock pot cooking is one of my FAVORITE ways to make yummy soups and stews. I was craving chicken and dumplings one day and decided to knock some out using ingredients I had in my fridge. This is HONESTLY one of the easiest dishes I have ever made in my crockpot and will definitely be making it again! Here is my quick and easy recipe for chicken and dumplings.



2-3 chicken thighs or breasts

1 can of cream of chicken soup

2 cups of chicken broth

frozen carrots and peas

1 small white onion

1 package of buttermilk biscuits (You know the ones that pop open)


black pepper to taste


1. Before you chuck everything into your crockpot there is a little prep work to be done. Chop the onion into small bite size piece and sautee in small skillet until tender. Set aside

2. Brown your chicken in the same skillet. You do not have to cook the chicken through. This step is simply to add more flavour to your dish. Remove chicken once it gets brown.


1. Add chicken, chopped onion, frozen peas and carrots, can of cream of chicken soup and chicken broth into crop pot. Add pepper and about 2 tablespoons of butter. Mix mixture and cover. Set on high and cook for about 3 hours.

2. Once 3 hours have passed remove chicken and shred. Add back into crock pot.

3. Open your biscuits and cut each one into quarters. Coat them with flour and top the crockpot with about 3 biscuits (12 pieces) and gently submerge them into the soup. Feel free to add more if you wish. Cook for 30 mins.
